What a varifocal camera does

A varifocal camera has a lens that you can adjust to zoom the view in or out. That is useful when you install it, because you can frame the scene you want. But there is a catch: the recording keeps only the clarity of the picture at the zoom level you set. When you later play the footage back and zoom into it, the extra detail is not there, and the image breaks into blocks (pixelates).

What a 4K camera does

A 4K camera records at 8MP, which means 8 million pixels, every time. Because the detail is in the recording itself, you can zoom into the footage afterwards and the picture still holds together:
